How I Cook My Eggs
The first thing I do is to crack 2 eggs in a medium bowl and whisk them. I season my eggs with black pepper because I use salted butter when I scramble them. I set my eggs aside and place a cast iron pan over medium heat. Once the pan is heated, I put 1 1/2 Tbsp of butter and allow it to melt. Once it’s melted, I let it cook until the butter begins to lightly brown and remove from heat. I pour my eggs in and put my pan back on the heat until I see the eggs cooking around the edges. Once that begins, I remove the pan from the heat and scramble them until they’re lightly scrambled, and pour them onto a serving dish to stop the cooking. They come out light and fluffy and not over cooked. This is how I scramble my eggs.
